You can re-assign ("transfer") a probe to another user, but you must be logged in as the probe's host to do so. At which point, your account's probes are listed on the "mine" tab, https://atlas.ripe.net/probes/mine

I tried to re-add it but it won’t let me. The portal says the key already exists. The probe may be paired with my former email address.
SSH keys are unique to a probe and identify them, as such, if there is a pre-existing probe with that key, you cannot re-add/register a new probe with it.
If you can still log into that old account, transfer the probe to your new account. If you wish to re-generate the SSH key, delete both the private and public key, and restart the service.
